Add all ingredients into the blender, and blend on high for 1 minute or until a uniform consistency is achieved.
(OPTIONAL) Transfer blended mixture to an airtight container, and let sit in refrigerator for 4 hours.
Heat a skillet over medium-high heat. Spray the pan with cooking spray, and add the batter to the pan to form a pancake.
Allow to cook on one side for 2-4 minutes or until the edges start to appear cooked, and then flip.
Remove from the pan and serve. Repeat until you've cooked as many pancakes as you want.
Let cool completely before serving — GF baked goods firm up and improve in texture as they cool. For best results, rest 15-20 minutes.
