Pre-heat the oven to 400°F/204°C.
Cut the potatoes lengthwise into strips.
Place in a large bowl.
Pour the egg whites over the cut potatoes.
Sprinkle with salt and pepper and any additional seasonings you desire.
Place parchment paper on a baking sheet. Spray with cooking spray for 1 second, and then place the potato strips on the sheet.
Bake at 400°F/204°C. After 20 minutes, remove from the oven and move the potatoes around. Place the baking sheet back in the oven and let cook for another 10 minutes.
Remove the potato strips from the oven and allow to cool. Enjoy!
