Pre-heat the oven to 176°C (350°F).
Blend all ingredients in a blender until there is a smooth batter.
Add the mixture into a muffin pan or a regular baking pan. Be sure to spray the pan with cooking spray before adding the batter.
Bake at 176°C (350°F) for 20-25 minutes or until you can stick a toothpick into the muffin and the toothpick comes out clean.
While the muffins are baking, prepare the frosting by mixing the thick unsweetened dairy-free yogurt and sunflower seed butter powder.
Remove the muffins from the oven and let sit to cool completely to firm up.
Apply the frosting to each muffin if desired and serve.
