Make the salsa

Make the salsa: combine diced mango, red onion, cilantro, jalapeno, and half the lime juice in a bowl. Season with a pinch of salt. Set aside to let flavors meld.

Season mahi mahi

Season mahi mahi fillets with cumin, chili powder, turmeric, salt, and pepper on both sides.

Heat olive oil

Heat olive oil in a nonstick skillet over medium-high heat. Cook fillets 3-4 minutes per side until fish is opaque and flakes easily. Internal temp: 145°F/63°C.

Squeeze remaining lime

Squeeze remaining lime juice over the cooked fish in the pan.

Plate fish and

Plate fish and top generously with fresh mango salsa. Serve with cauliflower rice or a side of roasted sweet potato.
