Make the tuna salad. Drain the tuna and place in a bowl with the red onion, light mayonnaise, dijon mustard, diced pickles, and pepper. Mix with a fork until there is a creamy consistency.
Lay out the rice cakes and spread the tuna salad on top of the rice cakes.
Add the remaining veggies on top of the tuna salad. Top with lettuce and eat as an open-faced sandwich.
Let cool completely before serving — GF baked goods firm up and improve in texture as they cool. For best results, rest 15-20 minutes.
